I can't believe next week will be May! I got half of my garden planted last weekend before having surgery on my foot Tuesday. I planted lettuce, spinach, carrots, and onions. I still need to put in kale and green beans. I am hoping I can talk my husband and/or children into planting those for me in the next week or two. The peas I planted 10 days ago are just starting to peak through the soil. It's so exciting!
I will be in a surgical boot for the next 6 weeks. I figured once I am healed it will be about the right time to plant the rest of my garden. That will include zucchini, melons, cucumbers, peppers and tomatoes. I am really excited about this gardening season.
We are still enjoying canned produce from last year which is super awesome. My goal for May is to eat as much from the pantry as possible. We still have lots of corn and green beans so you will see those on the menu frequently.
Another goal for May is to keep track of all the money we spend on groceries for the entire month. I know I have been going over my $500 budgeted amount. We still have a good supply of meat and fish so it really shouldn't be a problem to stay within $500. Hopefully tracking our grocery expenses will show me where and what we are spending all our money on.
How interesting life cycle goes: I am canning for this year while you still enjoy last year's harvest! :)
