Here is what is on our menu for this week. This will be a very busy week for us, so hopefully we can stay on schedule.

*Monday..Roast, potatoes, and carrots. Jello.
*Tuesday...Taco pie (one of my favorites, see recipe below)
*Wednesday...Porkchops, broccoli and fruit.
*Thursday...Chicken breast over salad, fruit.
*Friday...Steak, baked potatoes, homemade rolls, fruit.
*Saturday...depending on plans, leftovers.

To see what others are having check out I'm an Organizing Junkie.

Taco Pie

*Ingredients
ground beef 1-2lb depending on your likes. I use 2lb.
taco seasoning
Pillsbury or generic crescent rolls
sour cream 8oz
shredded cheddar cheese 1 package or 2 cups

*Toppings (optional)
lettuce
tomato
onion
green pepper
corn chips or Doritos
salsa

Unroll crescent rolls onto bottom of a greased 13x9 pan. Prepare ground beef, mix in taco seasoning. Pour meet over crescent rolls. Empty contents of sour cream over meat mixture. Top with cheddar cheese. Bake in oven 350 for 15-20 minutes or until crust is browned. If you use a glass pan just pull it out and look underneath the pan.

Let cool for 10 minutes. Sprinkle with crushed chips. Cut into serving pieces. You can have everyone individually add their own toppings.
