Productive Day
While the kitchen was not a pretty site for most of the day I did get a lot accomplished. I made 6 loaves of white/wheat bread, 4 loaves of cinnamon bread, 2 loaves of banana bread and a double batch of sugar cookies. I didn't get to the waffles or pancakes done. Or the chocolate chip cookies. I guess I will have to have a baking day part 2.
It feels good to get my freezer stocked again with breads.
Here are some of the recipes:
Banana Bread
Igredients
1 3/4 cup flour
2/3 coup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup ripe mashed banana
1/3 cup shortening, margarine or butter
2 T of milk
2 eggs
1/4 chopped nuts (optional)
In lg bowl combine 1 cup of the flour and all other dry ingredients. Add mashed banana, milk and butter. Mix well with electric mixer for 2 minutes. Add remaining flour and eggs. Mix till blended.
Pour into greased loaf pan and bake 350 for 55 minutes.
For the white bread I have 2 recipes I use. The first one is called Peasant Bread. It is very easy, no kneading!
Peasant Bread
Ingredients
2 1/4 teaspoons yeast (1 package)
2 T. Honey or sugar
1 tsp salt
2 cups warm water
2 cups all purpose flour
2 cups wheat flour
Combine the yeast, water, sugar or honey, and salt and let sit for 10 minutes. Add in the flours and stir until mixed well. Dough will be very sticky. Place dough into well greased bowl and let rise 1 1/2 hours.
Shape into 2 loaves and place on greased cookie sheet. Cook for 30min at 375
