Harvest

Here is a picking from my garden. From this we made 8 pints of salsa. We still had enough peppers to freeze 4 pint size bags. Now I just have to wait for more tomatoes to rippen. I think we will definitely have enough salsa to keep us warm this winter!

  1. My garden hates me. Except for my cukes. What do you do with all of your cucumbers? Pickles? Just eat them? Curious.....

  2. I need help with my cucumber invasion too. How do you preserve your tomatoes? I'd like to try freezing them. Any luck?

  3. Wow. You must be a great gardener. Everytime I garden, everything dies. Looks like you'll have a copy meals ahead of you.

  4. Faerie Mom, Last year I made about 18 quarts of pickles with all of my cukes. So...needless to say I don't need any more pickles! We still have some left! We have just been eating them every day for lunch, dinner and snacks. I have been giving them away to neighbors, hubbys co-workers and any relatives that are willing to take them.

Amy, I have been using all my tomatoes this year. Last year however I canned alot of my tomatoes and froze some. For freezing I just washed them, allowed them to dry and put them in a Ziplock. When it came time to use them I just tossed them into boiling water to get the skins off or into the crock pot for cooking. It is very simple.

  5. I love how big your pepppers are. I know peppers are supposed to love the heat, but here they ripen when they're really small, and I don't get many.

My tomatoes, zucchini, and butternut squash are doing well, though!
