Menu Plan Monday

Here is what is on this week's menu.

Monday...Fried fish, leftover mashed potatoes (I made these tonight, I used a mixture of russets and red potatoes, then mixed in milk and some leftover french onion dip we had and they were sooo yummy!) blueberry muffins and fruit cocktail.
Tuesday...Spaghetti, garlic bread
Wednesday...leftovers (I always make a large batch of spaghetti and as of tonight-Sunday-we have lots of leftover steak in the fridge)
Thursday...Chili, cheddar bread
Friday...Chili again or fend for yourself

Nothing too exciting I know. To see what others are having this week head over to I'm an Organizing Junkie.

  1. Just wanted to say that the potatoes sound really good with the french onion dip. Might just need to try that! I know we will be using left over beef roast this week. I cook it up originally (tonight) in the crock pot with beef broth made from bouillon cubes (I used to buy the broth from Save-A-Lot thinking I was saving money til I realized I could use the bouillon, duh). Then for leftovers I shred the meat up (not too fine), place it in a large pan with the broth and heat it til it is hot. Then we have leftover rice or egg noodles with it. The meat always seems more tender at this meal than it did originally.

  2. That sounds really good. My grandma used to make something similar with the egg noodles, beef broth and stew meat.
