Homemade Beef Jerky

Our family loves beef jerky. Buying it from the store can be so expensive. We have been making our own for awhile now. There are many recipes and ways to make jerky, this is how we do it.

When we purchase a quarter of a beef we always end up with quite a few roasts. The kids aren't huge fans of cooked roast so this works perfect to make jerky. I use the arm roast cut. Cut into thin pieces. Ours is frozen so it works best to let it partially thaw. It is a lot easier to cut if it is still a little frozen.
Marinade (This makes enough for 5 lbs of meat)

10 ounces of Soy Sauce
10 ounces of Worcestershire Sauce
5-10 ounces of Teriyaki Sauce (optional)
4 ounces Liquid Smoke (optional)
3 Tablespoons Brown Sugar
3 Tablespoons of Garlic Powder
3 Tablespoons of Onion Powder

Combine all ingredients in a bowl and mix. Add sliced meat and let marinate all day or overnight. You can stir it a few times if you remember.After it has marinated, lay all pieces, not touching, onto dehydrator screens.
Cook for 8 hours or until done. If you don't have a dehydrator you could also bake in the oven at 150 for 8-10 hours.We keep ours in the fridge when it's done. Not sure if you have to or not. When I made this last batch I made a double batch and put some in the freezer to have for later.
