Chicken and Rice Soup

This is what I call comfort food. I made this the other night when it was snowing outside and it was really cold. It was nice to curl up to a nice bowl of hot soup. This soup is really thick. My kids referred to it as porridge. Not that they have ever had porridge. My younger 3 didn't like it (no surprise there) but my husband, oldest son and I all thought it was really good.

*5 Cups chicken broth
*1 pound boneless skinless chicken breast ( I used 2 breasts) cut into small pieces
*1 1/2 cup celery sliced
*1 1/2 cup carrots sliced
*1/4 cup chopped onions
*3/4 cups raw white rice
*1/2 tsp pepper

Place all ingredients into crockpot and cook on low 6-8 hours.

This soup goes really well with homemade dinner rolls, warm from the oven!

  1. That soup (or porridge, lol) looks really good! I made one almost like it last weekend but I used noodles instead of the rice. The rest was pretty much the same.

  3. Wow, this looks really yummy. Looks like I may have found tomorrow's dinner. I have wanted to make a chicken and rice soup in the crock pot, but wasn't sure when to put the rice in. Anyhow, hope it works with brown rice as that is all we have. Thanks for sharing.

  4. Just to let you know, I did make the soup tonight. It was really good. My son didn't like it at first. Strangely, when he went back for seconds he said it tasted better. And for some reason it seemed like it was too much pepper. Not sure why. I added a little more chicken and 1 1/2 cups of broccoli, plus I think another cup of water or two. After 5 hours of cooking it seemed to need more water so I added 2 more cups (by water I guess I mean broth as I used the bouillon cubes). And yes, it was fine with brown rice.

  5. Great, I am glad it turned out for you. Good to know brown rice works too. Broccoli sounds good. I may have to add that next time, all my kids love broccoli which I think is strange, but I'm not complaining!
