I thought I was doin' so well...

Yesterday was a good baking day. My kids have been whining because we havn't had any sandwhich bread in the house for a few days. We also ran out of milk on Monday.

Yesterday I baked 2 loaves of banana bread and 2 loaves of artisan bread. Both delicious. The artisan bread is great toasted with peanut butter. And the banana bread, well you don't have to do anything to it. I even substituted evaporated milk in my recipe since I was out of milk. A year ago I would of panicked and probably would have ran to the store. Now I actually have evaporated milk in my pantry!

I apparently forgot that I had set out 2 loaves of frozen bread dough that I had found in the back of my freezer. I was also planning on making cinnamon bread. I have been having trouble with bread rising because it is so chilly in the house so I decided to place it in the microwave. Except, I forgot about it. This is how it looked 24 hours later when we found it this morning.Oops. And I thought I was doing so well too. (If you look closely, there is actually a plate under there.)

  1. How did you run out of bread after Fareway had it for 88c last week? :)

    I can't imagine you paid much for that frozen dough so don't beat yourself up!

  2. Oops! When I bake my homemade bread (which I haven't done in forever) I use the oven to help it rise. Set the oven to about 400 and turn it on for 1 min (so it doesn't actually reach 400) Then shut it off. Makes the oven nice and warm so the dough rises beautifully. You can also put the dough on a cooling rack and put a pan of boiling water underneath it. Just add more boiling water if it cools down.

  3. Oh that is rich. Funny that plate is hiding so well. I have done the same thing.
    Let it rise under a large bowl. Cover with a towel, that might also help.
    The oven on to 170 for 15 minutes then turn it off. Spray a little water in it for humidity rise the bread in there. This is also good for rapid rise yeast.
