Yesterday I baked 2 loaves of banana bread and 2 loaves of artisan bread. Both delicious. The artisan bread is great toasted with peanut butter. And the banana bread, well you don't have to do anything to it. I even substituted evaporated milk in my recipe since I was out of milk. A year ago I would of panicked and probably would have ran to the store. Now I actually have evaporated milk in my pantry!
I apparently forgot that I had set out 2 loaves of frozen bread dough that I had found in the back of my freezer. I was also planning on making cinnamon bread. I have been having trouble with bread rising because it is so chilly in the house so I decided to place it in the microwave. Except, I forgot about it. This is how it looked 24 hours later when we found it this morning.
How did you run out of bread after Fareway had it for 88c last week? :)

Oops! When I bake my homemade bread (which I haven't done in forever) I use the oven to help it rise. Set the oven to about 400 and turn it on for 1 min (so it doesn't actually reach 400) Then shut it off. Makes the oven nice and warm so the dough rises beautifully. You can also put the dough on a cooling rack and put a pan of boiling water underneath it. Just add more boiling water if it cools down.

ReplyDeleteLet it rise under a large bowl. Cover with a towel, that might also help.
The oven on to 170 for 15 minutes then turn it off. Spray a little water in it for humidity rise the bread in there. This is also good for rapid rise yeast.
if it happens again just re-work it 10 kneeds and let it rise again
