It definitely has made us more aware of what we are eating and how it affects us. My husband has suffered for years with a horrible stomach. Foods just don't agree with him sometimes and he has taken medication to help with that. Since starting this diet he hasn't had to take his medication at all and is feeling much better.
The first week was rough. I suffered from headaches almost daily from the withdrawals of caffeine and sugar. I felt better on Day 9. I didn't crave it near as bad as I had before.
We ate so bland that first week that it was really tough to continue. Finally we started looking online for recipes we could make with the foods that we were allowed to eat. Wow what a difference it makes when you are eating something with flavors. It's much more enjoyable! We found some meals that were super yummy and good for us too!
Here is a new recipe we tried. It's a twist on tacos. One of my favorite meals! Instead of ground beef we used ground turkey, which as a bonus is way cheaper. $2/lb on sale this week at our grocery store. Instead of tortilla shells you use leaf lettuce. We used our own homemade tomato sauce as well as taco seasoning. I copied the recipe below if you want to give it a try. Only 256 calories per serving.
Turkey Taco Lettuce Wraps
Ingredients
- 1-1/3 pounds 99% lean ground turkey
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 small onion, minced
- 2 tablespoons bell pepper, minced
- 3/4 cup water
- 4 oz can tomato sauce (certified gluten-free if necessary)
- 8 large Iceberg lettuce leaves
- Optional Garnish: Reduced fat cheddar cheese
Directions
Brown turkey in a large skillet breaking it into smaller pieces as it cooks. When no longer pink add dry seasoning and mix well. Add the onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes.
Wash and dry the lettuce. Divide the meat equally between the 8 leaves and place in the center of each leaf and top with your favorite taco fixins!
